Wittering · Episode 03

Lagering Takes Six Weeks.

Why the beer costs what it costs, told by somebody who has thrown a batch away and would like to explain the reasoning.

The episode

What it is about.

A tank doing a proper lagering is a tank not turning over a faster beer, and the arithmetic of that is the single largest input into the shelf price. The episode does the sum on air.

It also covers the first batch, which went down a drain. That decision is easy to describe as integrity after the fact and was, at the time, a large number written off by people who were not certain they were right.

The barley comes from the farm. The episode is careful about which products that is true for and which it is not, because the distinction matters and is the sort of thing that gets fudged.
